The Dill Martini

Dirtier than a dirty martini, this version uses complex pickle brine rather than the simple
saline olive brine.
It’s a savoury bombshell for lovers of the Bloody Mary, and
of course eaters of pickles. Our Old Tom 6 gin is ideal in this kind of savoury drink, with its peppery flavour and sting of Scotch bonnet in the tail. If you haven’t made one before, start out with a small amount of pickle juice – you
can always add more if you think you’d like a more pronounced pickle flavour.

- 60ml Old Tom 6 Gin
- 25ml dry vermouth
- 15ml pickle juice, or more to taste
- 1 dill pickle, to serve

- Chill a martini glass in the freezer for at least 20 minutes before beginning
- Put the gin into the cocktail shaker, followed by the vermouth and pickle juice.
- Stir briefly and taste to see if you’d like more pickle flavour, and when you are happy with the mix, add ice cubes
- Shake vigorously for 20 seconds, then
strain into the prepared glass Skewer the pickle with the cocktail stick or just rest it in the glass so it gets nice and boozy.
